Bread Machine Rye

Christmas is over. You've stuffed yourself with cookies. You're thinking that you'll start eating healthier in the new year. But ... but ... there are Christmas leftovers! Maybe a roast, maybe a ham. A sandwich would be nice.

Those leftovers deserve home made bread, but you worked so hard before the holidays. You want to put your feet up and relax. You don't want to knead bread, you want it to be as easy as possible

So, maybe you have a bread machine. That takes care of the lazy part. Then there's the healthy part.

When it comes to bread, whole grains are usually what people are looking for. This bread is 2/3 whole grains, with 1/3 white wheat and 1/3 rye. The final third is bread flour, because I think it helps the texture of the bread.

This makes a nice sandwich bread, and it couldn't possibly be easier.

 Bread Machine Rye Bread

1 teaspoon instant yeast
4 1/2 ounces (1 cup) bread flour
4 1/2 ounces (1 cup) white whole wheat flour
4 1/2 ounces (about 1 cup) rye flour
1 tablespoon wheat gluten
1 teaspoon salt
2 tablespoons sugar
1 tablespoon caraway seeds
1 1/2 cups cool water

Add all the ingredients to your bread machine in the order required by your bread machine (this is the proper order for the machine I have,)

Set the machine for the regular-style loaf, dark crust (if you have that option)

Remove the loaf from the machine when it is done baking. Let it cool completely on a rack before slicing.

Thanks for pointing that out! I'll shoot an email over there and ask them to fix it. Looks like the http stuttered.
Looks great, I'm been looking for a new rye recipe to try. I'm going to let you know how it turns out. Do you think I can substitute the wheat gluten for something else?

There really is nothing I can think of that you'd use instead of the gluten. It would work without it, but you wouldn't get the same elasticity in the dough.
